Grapes were taken from 5 different, organic vineyard sites of 15-65+ year old ungrafted and grafted vines. Hand harvested and with bunch selection to include <20% botrytis.
Produced at the Staffelter Hof winery. A 6 hour maceration was followed by a very cool fermentation in barrique, foudre and stainless steel.
Pure culture yeast varieties were deployed in a sequential inoculation. 1/10th of the wine was put through malolactic fermentation. The wine was sterile filtered and bottled by hand.
